Spiced Waffles and Apple Pear Chutney


This morning I had time and leisure to use my new Belgian waffle iron for the first time.
I love waffles! Especially for breakfast. To make them more healthy and tasty I added hazelnuts and kept them low fat.
As I always need some fruit to fuel me in the morning I made some apple-pear-chutney.

That's what you need for 2 Belgian or 4 regular waffles:

1 1/4 cups (180g) flour
1/2 cup (45g) ground hazelnuts
1/4 cup (50g) cane sugar
1/2 tsp cinnamon
1/2 tsp ground ginger
1 tsp Weinstein baking powder
1 pack vanilla flavour
20 g melted butter
1 cup milk of your choice

Preheat the waffle iron according to the manufacturer's instructions.
Mix the dry ingredients in a large mixing bowl. Then slowly add the melted butter and the milk while stirring with a wire whisk.
Then bake your waffles according to the manufacturer's directions.
Before serving you can drizzle some maple sirup or agave nectar over them, or like me just pretend it was snowing and sprinkle some powdered sugar on top!


Apple-Pear-Chutney
Makes 2 portions:


1 apple, peeled and cut into pieces
1 pear, cut into pieces
juice of half an orange
flesh of half an orange, cut into pieces
juice of half a lemon
1/8 cup cane sugar (I think next time I'll use less because it turned out a bit too sweet to my liking)
1 cinnamon stick
(a pinch of ground nutmeg)

Prepare the fruits and add the lemom and orange juice and the cinnamon stick. Heat everything in a pot and bring to a simmer. Simmer for about 10 minutes until the apple and pear are soft. Then let it rest for a while ,that the cinnamon flavour can fully develop.
